Choose Your Beef

QUARTER BEEF

Most popular choice: a balanced mix of roasts, steaks, and ground beef

125-140 lbs

A quarter beef is an equal 1/4 share of the whole animal. All four quarters are processed the same way so every customer receives an equal mix.

Steaks — approximately 20–25 lbs
Roasts — approximately 20–25 lbs
Ground Beef — approximately 85–90 lbs

Cut amounts are approximate and can vary. Total estimated take-home is approximately 125–140 lbs, primarily boneless cuts and ground beef.

No cut sheet. No complicated choices. Quarter beef is processed using our standard cut selection so all four shares stay as equal as possible.

Special items like liver, heart, tongue, marrow bones, or stew bones may be requested but are subject to availability.

*Exact packaged weight and number of cuts vary depending on the size and yield of the animal.

Essential Cuts: A diverse variety of premium steaks, savory roasts, and burger.
